Step 1
Heat oil and add mustard, cumin, garlic, chillies and curry leaves.
Step 2
Add Turmeric Powder and Vijaya Red Chilli Powder.
Step 3
Mix Vijaya Besan with water until smooth.
Step 4
Pour into the pan and stir continuously.
Step 5
Cook for 8–10 minutes until thick and glossy.
Step 6
Garnish with coriander.
Step 7
For Bhakri,Mix jowar flour, salt, and warm water to form a soft, smooth dough.
Step 8
Divide into balls, flatten into round bhakris, and cook on a hot tawa until both sides are lightly browned

Roast directly over the flame until it puffs (optional), then serve hot with pithla and a little ghee or butter.

Chef's Notes
For the best flavour, cook the pithla on low heat while stirring continuously to achieve a smooth, lump-free texture. Serve hot with freshly made jowar bhakri, onion, and a dollop of ghee.
Recipe Tips
Adjust the spice level by increasing or reducing Vijaya Red Chilli Powder.
Use warm water while kneading the bhakri dough for a softer texture.
Garnish with fresh coriander and serve with curd, thecha, or pickle for an authentic Maharashtrian meal.
Storage Instructions
Pithla is best enjoyed fresh. If needed, refrigerate in an airtight container for up to 1 day and reheat with a splash of water before serving. Bhakri is best consumed immediately after cooking.
